WATERMELON, FETA AND ROCKET SALAD WITH BALSAMIC DRESSING
A sweet and tangy summer salad made with fresh watermelon, salty feta cheese and sharp rocket (arugula) leaves. Finish it with a drizzle of balsamic dressing and a sprinkling of pine nuts.

4handfuls of fresh rocket (arugula)washed (and dried)
4tbspof feta cheese
2tbsppine nutsraw or toasted
2tbspNewman’s Own Balsamic Dressing*
Pop your rocket into a big salad bowl.
Carefully scoop the watermelon flesh out of its shell. Chop the fruit into rough bite-size pieces and remove any larger pips (the little black ones can stay!). Put the watermelon in the bowl with the rocket, along with any juice from the chopping board.
Drizzle the Balsamic Dressing over the watermelon and rocket, then use your hands to toss it all together, until everything is mixed and coated.
Crumble the feta cheese over the top of the salad.
Sprinkle over the pine nuts, and serve immediately.
